Ok, this one is extra not complicated. One lazy day for dinner I decided to make something I hadn’t made – ever, and haven’t eaten since I lived at home and my Mom put one in front of me for dinner – the BLT. I set out to make it less of an empty calorie sort of thing and used dark greens and sprouted grain bread. On a whim, and completely out of laziness I decided to try to bake the bacon on a cookie sheet instead of messing up my stove top with grease splatter. Turns out, this works great.
Just cut a piece of parchment larger than your cookie sheet and lay the bacon out so that the pieces slightly overlap.
Bake them at 400 until its about half done, take it out and flip it over (or don’t! half the time I don’t even bother with this step, it still works). The amount of time it takes depends on how thick your bacon is, you just have to watch it.
Lay the bacon out to drain on a paper towel, and walk away from the cookie sheet until the grease solidifies.
Pick up the parchment, and toss it in the trash. All done!
